Equipment
Large pot
Colander
Large skillet
Wooden spoon or spatula
Measuring cups and spoons
Knife
Cutting board
Ingredients
12 ounces pasta, such as penne, rigatoni, or fettuccine
2 boneless skinless chicken breasts, cut into bite-size pieces
1 teaspoon salt, divided
1 teaspoon black pepper, divided
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 tablespoons olive oil
3 tablespoons butter
5 garlic cloves, minced
2 tablespoons all-purpose flour
2 cups heavy cream
1 cup freshly grated Parmesan cheese
1/2 cup chicken broth
1/4 teaspoon crushed red pepper flakes, optional
2 tablespoons chopped parsley
Extra Parmesan, for serving
Directions
Bring a large pot of salted water to a boil. Cook the pasta until al dente. Reserve 1 cup of pasta water, then drain.
Season the chicken with 1/2 teaspoon salt, 1/2 teaspoon black pepper, garlic powder, and Italian seasoning.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 7 minutes, stirring occasionally, until golden and cooked through. Transfer to a plate.
Reduce the heat to medium. Add the butter to the skillet. Stir in the garlic and cook for about 30 seconds, just until fragrant.
Sprinkle in the flour and stir for 1 minute.
Slowly pour in the chicken broth, stirring until smooth. Add the heavy cream and bring to a gentle simmer.
Stir in the Parmesan a little at a time until melted and smooth. Add the remaining 1/2 teaspoon salt, the remaining 1/2 teaspoon black pepper, and the red pepper flakes if using.
Return the chicken to the skillet. Add the cooked pasta and toss until well coated. Add a splash of reserved pasta water if needed to loosen the sauce.
Stir in the parsley and serve warm with extra Parmesan on top.
Recipe Notes
Freshly grated Parmesan works best for a smooth, creamy sauce.
Add spinach or broccoli for an easy variation.
Reheat gently with a splash of broth, milk, or cream.
Short pasta works especially well here because it catches the sauce nicely.
