One-pan salmon with garlic spinach and lemon

Salmon has a reputation for being either overcooked or intimidating. This recipe fixes both problems. One pan, twenty-five minutes, and a method that produces salmon with a properly seared crust and a just-cooked center every single time. The garlic spinach beneath it does double duty as both vegetable and sauce.
